Overview
Welcome to Persimmon, where the seasons guide our table and every dish tells a story of care, culture, and connection.
Inspired by the humble autumn fruit, we embody beautiful contrasts: familiar yet extraordinary, rooted yet ever evolving. Our culinary philosophy bridges timeless Asian traditions with the abundant treasures of Colorado’s landscapes, celebrating ingredients at their seasonal peak.
We embrace a true farm-to-table way of life. Each day begins with a careful ritual of discovery—sourcing vibrant produce, fresh fish, and ethically raised meats from trusted local farmers and artisans who share our reverence for quality. These relationships not only anchor us in the land, but bind us deeply to the community we call home.
Our seasonal menus flow in step with nature’s rhythm, shaped by time-honored practices where farmer, chef, and land engage in mindful, respectful dialogue. Each dish reflects this harmony—an artful balance of tradition and creativity.
While food is our craft, community is our purpose. As your new neighbors, we’re committed to creating experiences that celebrate Montrose’s rich agricultural heritage and the connections we build around the table. Every plate is paired with a thoughtfully curated selection of wines and handcrafted cocktails—all served in a space where every detail is considered and every guest becomes part of our story.
Let us welcome you in the spirit of gathering, not just to dine, but to connect, to share, and to celebrate together.
So come—find your place at our table. It is set not merely for a meal, but for moments worth remembering. Dine with us, and be part of something nourishing, lasting, and truly extraordinary.
